Marino's Marvelous Potato Salad
3 large Russet potatoes 1-2 stalks celery
2 hard boiled eggs 3 tbls. salad olives
3 tbls. Miracle Whip 2 tbls. Parsley flakes
Worcestershire sauce salt
Peel potatoes (DO NOT DISCARD PEELS!!!) and cut into bite size cubes. Put in a large saucepan with water to cover. Add 1 tsp. salt. Bring to a boil, reduce heat to medium and cook until potatoes are soft. Drain and set aside.
While potatoes are cooking, coarsely chop the celery and olives and put in a large mixing bowl. Peel the eggs and quarter them lengthwise; then cut them into bite size pieces. Add to mixing bowl and add parsley and a few dashes of worcestershire.
When potatoes have been drained, add them to the mixing bowl. Add Miracle Whip and stir thoroughly.
